I found my favorite pancake recipe, and I’ve tried LOTS of different ones through the years. This is a very simple recipe that produces the perfect consistency of batter (in my opinion), and I’m going to share with you how I make pancakes!
Dry Ingredients:
2 cups of Flour
2 tablespoons of granulated sugar*
4 teaspoons of baking powder
1 teaspoon of salt
Place all these into a large mixing bowl and combine with a fork. I use a butter knife to level off the flour in the measuring cup
Wet Ingredients:
8 oz melted butter
1 and 1/2 cup of milk, plus 2 Tbsp
2 large eggs
1 teaspoon of vanilla extract
1 teaspoon of lemon juice
While I melt the stick of butter in the frying pan, I’ll combine all the wet ingredients into my measuring cup. Then I’ll take a fork and beat the eggs until the mixture is frothy. Finally when the butter is melted, I’ll pour it into the measuring cup and again mix with the fork. Now I’ll combine the wet stuff with the dry stuff and whisk together for about three to five minutes until nice and smooth.
I prefer using an 8-inch frying pan for my pancakes. The massive amount of baking powder in these flour patties creates delectably fluffy pancakes. I’ll use a 1/2 sized ladle and it pours just enough of the batter into the pan for a decent-sized pancake. Let the pancake cook for about three to five minutes on one side (until little air bubbles begin to form on the top), and then flip. I have my electric stove set to a number 2 for heat. Yeah, I’m way too patient. After flipping the pancake, cook for an additional two minutes, then plate and restart. I’ve found that adding the butter to the batter causes me not to have to butter my frying pan, and I get that wonderfully buttery taste all throughout the pancake!
For these pancakes I added a cup of fresh blueberries! Delicious! I will also note that the original recipe calls for 4 tablespoons of sugar, while I only used half. I’ve found that I’m consuming too much sugar in my diet, so I’m trying to cut some of it out where I can, and I’ve found the flavor to be perfectly fine. (And there’s only two on this plate, because I got impatient and was hungry!)
